mmm... milk!

So in the past couple of weeks, I have made the same cake twice.  A cake that I enjoy, but never have made.  It was a rare treat in my life, but now I fear it might be a staple baked good!  This AMAZING treat is usually referred to as Tres Leches Cake....mmmm..... three milks...mmmm....

My brother just turned 30 in April, and we had a fun cookout to celebrate.  his one request for his birthday was a Tres Leches Cake.  I had never made one before and every time we would talk leading up to the blessed event, he always asked "Are you practicing and perfecting your Tres Leches Cake?  It better be good!"  I knew I had to follow through so I went to a lady who has never failed me so far... The Pioneer Woman.  Thankfully, on her sidebar of recent recipes, Tres Leches Cake was there!  My brother approved (he used to live in Texas and had it all the time), so I made it again just last night for Cinco de Mayo!

It is a really easy cake to make!  You simply make a sponge cake with flour, eggs, sugar, vanilla, baking powder, milk, and salt in a 9x13 pan.


Flip it out onto a rimmed tray ( i used a bar pan) and let cool completely! in the mean time, mix some heavy cream, sweetened condensed milk, and evaporated milk..... mmmm..... I could drink that with a straw!



Once the cake has cooled, fork it and then poor that yummy, milky goodness all over it, and let it sit for 30 minutes to soak up ALL the tres leches!




Once that is done, you whip up some sugar and heavy whipping cream to make your own whipped cream!  Spread that yummy goodness all over the cake...



...and eat two pieces... and hope you can stop there!
